Professor in Molecular Food Microbiology, University College Cork, Ireland. My research is focused on microbial interactions in different ecological niches including food production systems- from farm to fork, and in the human gastrointestinal tract. I am particularly interested in the functional genomics of lactic acid bacteria and the interactions of these organisms with their infecting bacteriophages. Bacteriophages influence the ecology and functionality of natural and industrial ecosystems and it is essential to understand the contributions of both parties in their shared evolutionary processes.
